Popcorn is a go to for me as well. And when I’m truly in a dire blood sugar crash hangry zone, a scoop of peanut butter either on its own or with plain yogurt and fruit does the trick.
An even faster way for emergency homemade popcorn is to throw 1/3 cup of kernels in a brown paper bag, roll the top down a few times, and hit the popcorn button on your microwave! (someone shared this with me last year and BLEW MY MIND! )
YES popcorn+nutritional yeast! I know air poppers are much maligned, but I love mine... fresh popcorn in 3 minutes and the only dish to wash is the big bowl I pop into and eat out of.
I can also recommend my favorite work-from-home lunch, which is a can of tuna tossed with lemon/oil/capers, eaten off of nice crackers. Delicious and nutritious!

Boiled eggs is my go to emergency meal. Sprinkled with salt, or if I have an extra minute, drizzled with miso tahini dressing.
